Yesterday my wife was all like “I want brunch I want pancakes and hash browns and do we have any breakfast sausage?” We did in fact have all those things. I chefily opened many packets, including:
King Arthur Flour gluten free pancake mix that I totally bought because my wife is a little bit like that about gluten
Bo b’s Red Mill egg replacer
Soy milk
Frozen blueberries
Miyoko’s plant butter
Target brand organic maple syrup
Gardein veggie breakfast sausages
Frozen hash browns
But you still gotta finesse that shit, and I did them blueberry pancakes on my favorite kitchen appliance the Presto electric griddle and I flipped the hash browns as one single perfectly browned cake because I got skillz.

Yes that King Arthur GF flour is quite good, we started making pancakes and waffles with some frequency

I had to look it up, and there are MANY ingredients, but the short answer is soy + wheat gluten. Which is lol with the GF pancake mix.

I cook it up in a slightly excessive amount of olive oil. Some of the higher tech plant meats have a lot of added fat and you can skip that but these have not much so that oil helps get them nice and greasy like breakfast sausage supposed to be. This is definitely not the healthiest version.

(On the bright side, the quantity of gluten in something like that ought to be quite low compared to a pancake or other conventional baked good..
The oil is another example of that fineness you spoke of, knowing when something needs a bit of extra oil to hit expectations.

She just thinks that about gluten she has no real gluten condition and is more like a preference that she often breaks. I get her a smattering of GF products and she feels happy and all is well lol.
